Banana cake
4 eggs
125 gr
sugar
125 gr
chopped walnuts
100 gr
biscuit- or breadcrumbs
grated peel of 1 lemon
pinch salt
4-6 bananas
2 tablespoons sugar
1 tablespoon lemon juice
1 tablespoon rum
glaze:
150 gr
icing sugar
1-2 tblsp orange or lemon juice
extra:
baking oven, springform Ø 22 cm

How to prepare:
Preheat the oven to 180°C/360°F (fan oven 165°C/325°F).
Separate egg whites and yolks.
Beat the egg whites to stiff peaks.
Stir yolks with sugar creamy and add walnuts, crumbs, lemon grater and salt.
Fold the egg whites carefully into the batter.
Coat a greased springform with some breadcrumbs and spoon the batter in. Bake the cake 30-40 minutes. Let the cake cool on a wire rack.
Cut 2 times horizontal.
Peel the bananas, mash with a fork and add sugar, lemon juice and rum. Divide the banana over 2 layers and stack the cake.
Cover with orange or lemon glaze.
