Dutch Pepernoten
("spice nuts"/kruidnoten)
300 gr flour

140 gr
dark brown sugar
salt
3 teaspoons cookie spices
150 gr
soft butter
5 tablespoons milk
2 tablespoons pancake syrup

Preparation in advance:
Sift the flour in a bowl and mix well with the sugar, salt, baking powder and cookies (or pumpkin) spices. Add the butter, milk and syrup and knead the mixture well.
Let the dough 30 minutes rest at room temperature, wrapped in foil.
How to prepare:
Preheat the oven to 175°C/350°F (fan oven 160°C/310°F) and grease a baking pan.
Make very small balls of the dough or make characters (the "pepernoten" will double in size) and place on the baking sheet.

Bake for 15-17 minutes and turn off the oven.
Let the "pepernoten" cool 5 minutes in the open oven.
The nuts may be a little soft when warm but they stiffen while cooling.
