Spicy tortilla triangles

Ingredients:

2 flour tortilla's of 20 cm

oil

1 onion

2 garlic cloves

2 small red peppers

425 gr hover for conversion canned kidney beans

2.5 dl hover for conversion salsa

2 tablespoons fresh coriander

100 gr hover for conversion cheddar

Quarter the tortilla's and cut each quarter in three triangles.
Heat 2 tablespoons oil in a frying pan. Fry a couple triangles at the same time 30 seconden on both sides till they are crispy. Drain on kitchen paper.
Add if necessary some extra oil.
Heat 1 tablespoon oil in a medium pan. Add chopped onion, pressed garlic and chopped pepper and heat while stirring 3 minutes. Stir the slightly mashed beans, salsa and chopped coriander into the mixture. Remove the pan from the heat and let cool.
Divide the mixture over the triangles and let the edges free. Sprinkle with grated cheddar.
Place just before serving 1 minute under the grill or broiler till the cheese has melted.
