Caribbean Grapefruit cocktail

Ingredients:

3 large grapefruits (or 2 cans) 

1-2 tablespoons dark brown sugar

1-2 tablespoons ground coconut

12 ginger balls

6 tablespoons ginger syrup

 

some extra ground coconut

 

Preparation:

Half the grapefruits and remove the segments. Keep the peel.
Put the segments in a bowl and mix carefull with brown sugar, ground coconut, chopped ginger balls and the ginger syrup (fresh or syrup from the jar ginger balls).
Let rest for 3-4 hours in the fridge and spoon just before serving in the empty grapefruit peels.
Roast the extra coconut in a pan and garnish the grapefruit cocktail.
