Herring saladIngredients:4 herrings(or 8 herring fillets)4 cooked potatoes2 cooked beets2 sweetsour apples2 sweet-sour gherkins8 sweet-sour cocktail onions4 tablespoons oil2 tablespoons herb vinegar1/2 teaspoon mustardsalt and pepperlettuce leavesmayonnaise1 onion

How to prepare:Slice of the cleaned herrings 6 fillets to thin strips, keep the remaining 2 fillets for garnish.Cube the cooked potatoes.Peel and cube the beets.Cut or chop the apples, gherkins and shallots very small.Combine herring, potato, beets, apples, gherkins and shallots carefully.Make a sauce of the oil with vinegar, mustard, some salt and pepper. Stir well.Fold it into the herring-salad.Coat a bowl or plate with lettuce leaves and fill with the herring salad.Spoon mayonnaise over and garnish crosswise with 2 herring fillets and onion rings.
