4 cooked potatoes
2 cooked beets
2 sweetsour apples
2 sweet-sour gherkins
8 sweet-sour cocktail onions
4 tablespoons oil
2 tablespoons herb vinegar
1/2 teaspoon mustard
salt and pepper

How to prepare:
Slice of the cleaned herrings 6 fillets to thin strips, keep the remaining 2 fillets for garnish.
Cube the cooked potatoes.
Peel and cube the beets.
Cut or chop the apples, gherkins and shallots very small.
Combine herring, potato, beets, apples, gherkins and shallots carefully.
Make a sauce of the oil with vinegar, mustard, some salt and pepper. Stir well.
Fold it into the herring-salad.
Coat a bowl or plate with lettuce leaves and fill with the herring salad.
Spoon mayonnaise over and garnish crosswise with 2 herring fillets and onion rings.
