Cream cheese pies

Ingredients:

250 gr hover for conversion biscuits

125 gr hover for conversion melted butter

250 gr hover for conversion cream cheese

125 gr hover for conversion sour cream

125 gr hover for conversion caster sugar

2 eggs

1 tablespoon lemon juice

2 tablespoons flour

 

extra:

3 12 mold muffin pans

(or bake 3 times)

Grease the muffin pan and cover each mold bottom with a small circle baking paper.
Mash the biscuits very small and add while stirring the melted butter.
Push 1 tea spoon cookie-mixture firm in the molds. Place the muffin pans in the fridge.
Preheat the oven to 160°C/310°F (fan oven 150°C/300°F).
Separate the eggs.
Stir the soft cream cheese, sour cream and sugar to a smooth mixture. Add while stirring the egg yolks, lemon juice and flour. Beat the egg whites to stiff peaks and fold into the cream-cheese mixture.
Put 1 tablespoon in each mold and bake the pies 15-20 minutes.
