Cheese turnover

Ingredients:

175 gr hover for conversion feta

50 gr hover for conversion ricotta

2 tablespoons fresh mint

1 egg

2 spring onions

2 tblsp bread crumbs

1/2 teaspoon black pepper

16 slices puff pastry

(1 tblsp sesame seeds)

Preheat the oven to 220°C/425°F (fan oven 200°C/395°F).
Grease 2 baking sheets.
Put the crumbled feta, mashed ricotta, chopped mint, beaten egg, chopped spring onions, dry bread crumbs and ground black pepper in a bowl and stir well with a fork.
Cut circles of 10 cm from the dough. Spoon 2 level tablespoons cheese mixture in the middle of each circle and coat the edges with little water. Fold the dough over the mixture. Push the edges with a fork to get a nice curly edge. Brush with egg and sprinkle the bags optional with sesame seed. Place the turnovers on the baking sheets.
Bake in 15-20 minutes golden brown.
Make of the rest of the puff pastry i.e. twists.
