Quiche Lorraine

Ingredients:

400 gr convert conversionfried bacon

2 eggs

2 egg yolks

1 teaspoon French mustard

1/2 teaspoon mustard powder

1/8 teaspoon cayenne pepper

1/2 cup pork fat

1 cup grated Parmesan cheese

1/2 liter convert conversionwhipping cream

1 teaspoon chopped parsley

How to prepare:

Crumble the bacon and divide half in the baking pan.

Mix eggs, egg yolks, mustard, mustard powder, cayenne pepper, pork fat (include the remaining after frying the bacon) and 1/3 cup grated Parmesan cheese well in a bowl.

Preheat the oven to 150°C/300°F.

Heat the unwhipped cream till almost boiling (the cream must not cook !).

Add the cream to the mixture in the bowl, stir well and pour over the bacon in the baking pan. Place the pan for 35-40 minutes in the oven till firm.

Remove from the oven, sprinkle with the rest of the Parmesan, bacon and the chopped parsley. Serve hot.
