Hummus
(approximately 500 gram)
125 gr
dried chickpeas
water
1 tablespoon olive oil
1 small onion or shallot
1/2 teaspoon cumin
pinch cayenne pepper
2 tablespoons lemon juice
0,8-1,2 dl
olive oil
1-3 garlic cloves

Preparation in advance:
Soak the dried chick peas in clear water in a large bowl overnight (or use 175 gr
drained, canned chick peas).
How to prepare:
Wash the chick peas well and cook covered over medium heat 1 hour till they're soft.
Drain the peas and add the tablespoon olive oil, chopped onion, cumin and cayenne pepper to the peas in the pan and heat the mixture stirring 1 minute over high heat.
Mash the slightly cooled pea mixture in a kitchen machine with lemon juice and at flavour the extra olive oil and pressed garlic. Flavour with salt.
Add optional some water, for a less thicker sauce.
