Sponge dough cake

(basic gateaux recipe 1)

Ingredients:

4 eggs

160 gr hover for conversion sugar

pinch salt

120 gr hover for conversion flour

40 gr hover for conversion cornstarch

cake pan Ø 22 cm

Preparation:

Line the bottom of the cake pan with baking paper.
Preheat the oven to 200°C/395°F (fan oven 180°C/360°F).
Beat eggs and sugar with a mixer till the mixture runs like a broad ribbon off the whisks.
Sift salt with flour and cornstarch and fold with a wooden spoon into the egg-mixture (the air in the egg-mixture makes the dough rise).
Bake the cake 25 minutes in the middle of the oven.
Let cool (and freeze or) cut in half horizontal.
Add stuffing, i.e. coffee cream, jelly or whipping cream and topping like mocha, jelly with fruit frost or whipping cream. (See recipes.)
