How to prepare:
Preheat the oven to 180°C/360°F (fan oven 160°C/310°F).
Draw three circles of 8 cm on baking paper and turn it.
Beat the egg whites in a bowl creamy. Mix carefull with icing sugar and butter. Add flour and stir well. Let the batter rest for 15 minutes.
Divide with a cake knife 1.5 teaspoons mixture over each circle.
Bake the fortune cookies 5 minutes until the edges discolour a little.
Take the cookies, with a cake knife, rapidly from the baking sheet.
Place in each Chinese cookie a note with a wish.
Work with no more than three cookies at the same time. (They'll get firm very fast and can
break at folding. If broken, just warm in the oven a moment.)
Fold the cookies and mold slightly around an blund object (handle of a wooden spoon).
Let cool on a wire rack.
