1 tablespoon oil
150 gr (cooked or smoked) ham
1 little onion or shallot
2 tablespoons herb vinegar
6 tablespoons oil
1/2 teaspoon seasoning
pinch cayenne pepper
1 tablespoon parsley

How to prepare:
Clean and slice the mushrooms.
Heat 1 tablespoon oil in a frying pan and stir-fry the mushrooms over high heat 5 minutes.
Season with salt and let cool.
Chop the ham and mix with the mushrooms.
Mix the grated shallot with vinegar, oil, seasoning (optional sugar) and cayenne pepper. Blend it very well. Stir the sauce into the mushroom mixture.
Marinate an hour and sprinkle, just before serving, chopped parsley over the salad.
