Meatballs with feta filling

Ingredients:

300 gr hover for conversion ground beef

1 slice white bread

milk

2 teaspoons fresh parsley

1 tablespoon fresh mint

1 little onion or shallot

1 egg

pepper

salt

20 cubes feta (1x1 cm)

(or cheese if liked better)

2 tablespoons flour

olive oil to fry

Soak the crustless bread in some milk till the bread is soft and squeeze as much milk from the bread as possible.
Add mashed bread, chopped mint, chopped parsley, grated onion, egg, pepper and salt to the ground beef and knead to a firm mixture. Place the mixture 1 hour in the fridge.

Prepare:

Make 20 small meatballs and mold the meat around the cubes feta or cheese.
Coat with some flour.
Fry the feta-balls in a frying pan or in a deep fryer until golden brown.
Serve the small meatballs with for example chivesauce.
