Prawn toast

Ingredients:

500 gr hover for conversion raw shrimps

8 spring onions

(1 stem lemon grass)

2 garlic cloves

1 egg white

1 tablespoon oil

1 tablespoon fresh coriander

1 tablespoon fish sauce

2 teaspoons chili sauce

1 teaspoon lemon juice

8 slices old bread

sesame seeds

extra:

oil for frying

Mince the peeled shrimps, chopped spring onion, lemon grass, pressed garlic, egg white, oil, chopped coriander leaves, sauces and lemon juice in a kitchen machine to a homogenous mass.
Spread crustless bread thick with the shrimp mixture, sprinkle with some sesame seeds and cut each slice in 4 triangles (and place in the freezer).
Heat 1-2 cm oil in a pan and fry the shrimp toast 2-3 minutes with the shrimp mixture down. Turn and fry the other side in 1 minute golden brown and crisp.
Drain on kitchen paper .
Serve hot.
