Soak the raisins and currants an hour (better a night) in water (with a little rum).
Mix the lukewarm milk with the yeast (and sugar). Let rest for 10 minutes.
Sift the salt with flour in a large bowl. Make a hole in the middle and add the egg and yeast mixture. Beat with a mixer a few minutes very well: the batter must fall in pieces off the whisks. Stir the drained raisins and currants (and optional chopped apple and/or candied lemon) into the batter. Let (covered) rise 1 hour at a warm spot .

Prepare:

Heat the oil. Slide, using an icecream spoon or 2 greased spoons, the batter in the oil. Turn the old years fritters after 3 minutes and fry another 2-3 minutes. Make about 5-8 oil balls at the same time, they must have room to turn themselves.
Drain on kitchen paper and serve with icing sugar .
