Let rest for 10 minutes.Sift the salt with flour in a large bowl. Make a hole in the middle and add the egg and yeast mixture. Beat with a mixer a few minutes
very well:
the batter must fall in pieces off the whisks. Stir the drained raisins and currants (and optional chopped apple and/or candied lemon) into the batter. Let
(covered) rise 1 hour at a warm spot
