Texmex cheese cookies

225 gr flour

1 teaspoon chili powder
1 teaspoon garlic salt
0.5 teaspoon paprika powder
200 gr butter

How to prepare:
Sift flour, chili powder, garlic salt and paprika powder in a bowl.
Rub, with the fingertips, bits butter into the flour till the mixture resembles breadcrumbs.
Add beaten egg and grated cheese and knead, with cold hands, quickly to a coherent dough.
Wrap the dough in foil and let rest about 20 minutes in the fridge.
Preheat the oven to 210°C/400°F (fan oven 190°C/375°F).
Grease 2 baking sheets slightly with melted butter.
Roll the dough, on a flour dusted working surface, to a sheet of 3 mm thick.
Cut stars or circles of 6 cm. Place the cheese cookies with a spatula on the baking sheets.
Bake the cheese cookies 12-14 minutes until golden brown.
Let cool 2 minutes on the baking sheet.
