Basic cream sauce

(18 tablespoons)


Ingredients:

1 cup butter

3 egg yolks

1/2 cup water

1/2 cup whipping cream

pinch salt

How to prepare:

Melt the butter au-bain-marie.

Add one by one the egg yolks while beating with a mixer.

Beat the whipping cream with the water and salt and add bit by bit to the egg yolks.

Keep stirring till creamy (about 4 à 5 minutes).
