Bacon cheese soufflé(6 servings)Ingredients:some butter1/2 cup butter1 teaspoon herb salt(or salt and pepper)1.5 cup whipping cream200 gr old cheese8 eggs1/2 cup fried bacon

How to prepare:Preheat the oven to 200°C/395°F. Grease a deep baking oven dish with some butter.Melt the butter in a pan and add herb salt (or salt and pepper) and whipping cream.Stir till the mixture is smooth (don't cook). Add the grated cheese and stir until the cheese has melted. Remove the pan from the heat.Separate the eggs. Beat the egg yolks one by one into the sauce. Mix each egg yolk well before adding the next.Beat the egg whites to stiff peaks. Fold the egg whites into the sauce. Pour the mixture in the oven dish and sprinkle with fried and crumbled bacon. Place the oven dish in the oven and reduce the temperature to 190°C/375°F. Let the soufflé get well done in approximately 30 minutes.The soufflé is ready when the upper part is pale brown and feels firm.
