Quark cake
125 gr flour

pinch baking powder
1 egg
50 gr
sugar
pinch salt
50 gr
cold butter
1 kg
thin quark
200 gr
sugar
125 gr butter

1 package vanilla pudding
grated peel & juice of 1 lemon
3 eggs

How to prepare:
Sift flour and baking powder on a work area, make a hole in the middle and break the egg in the hole.
Combine the egg with little flour.
Sprinkle the sugar and the salt over.
Cut the cold butter in very small pieces and cut, with 2 knives, into the flour.
Knead, with cool hands, quickly to a coherent dough.
Wrap the dough in foil and let rest about 30 minutes in the fridge.
Preheat the oven to 200°C/395°F (fan oven 180°C/360°F).
Line the bottom of a springform pan with the dough.
Put the quark in a deep bowl. Add sugar, soft butter, vanila pudding powder, lemon grater, lemon juice and eggs and whip to a light and smooth mass. Place in the springform pan and
smoothen the quark on top. Bake the pie 60-70 minutes in the middle of the baking oven.
When the pie is ready remove only the sides of the pan and let cool completely.
Let the pie get firm overnight in the fridge.
