Laotian dried beef


Ingredients:

1 kg convert conversionbeef loin

1-2 teaspoons salt

1/4 teaspoon chili powder

1 teaspoon black pepper

1 tablespoon soft brown sugar

4 garlic cloves

2 teaspoons sesame oil

1 tablespoon peanut oil

Preparation in advance:

Cut the partly frozen meat in thin slices of 2.5 mm thick and cut in strips.

Mix salt, chili powder, ground black pepper, sugar, squeezed garlic, sesame oil and peanut oil in a bowl.

Add the meat strips and rub with the fingertips into the oil mixture till the meat is well coated. Cover the meat with foil, place in the fridge and let marinate at least 4 hours.

How to prepare:

Divide the meat on a wire rack and place in an oven dish.

Bake 5 hours very slowly in a baking oven on 120C/250F till dry.

Heat the beef before serving 3 minutes under the hot broiler or grill.
