Ingredients:
2 cm ginger root
500 gr small mushrooms
6 spring onions
60 ml (rice) vinegar
60 ml Japanese soy sauce
2 tablespoons sherry
salt

Slice the peeled ginger very thinly, wet a little to keep moist and set aside.
Clean the mushrooms with wet kitchen paper and cut the woody ends of the stems.
Put with the sliced spring onions in a bowl.
Stir vinegar, soy sauce, sherry and salt at flavour well.
Pour the mixture over the mushrooms, stir well and let marinate for at least 15 minutes.
Remove the mushrooms and onions with a skimmer from the fluid.
Put in a bowl and garnish with the slices ginger.
