Steak tartare

Ingredients:

400 gr hover for conversion ground steak

salt

pepper

1 tablespoon tomato ketchup

4 egg yolks

4 tablespoons capers

4 tablespoons cocktail onion

1 onion

parsley

4 gherkins

 

Preparation:

Mix ground steak with salt, pepper and tomato ketchup.
Divide in 4 portions and make a heap on each plate.
Push a (cleaned) half egg shell with in it an egg yolk in each heap.
Garnish with capers, cocktail onions, chopped onion, parsley and chopped gherkins.
 
Place worcester sauce and the pepper mill on the table so everyone can compose his or her own steak tartare.
