Frisian "Kniepertjes"

(Oldyear wafer rolls, Oublies)

Ingredients:

500 gr hover for conversion flour

500 gr hover for conversion sugar

250 gr hover for conversion butter

9 eggs

1 tablespoon cinnamon

grated lemon peel

salt

 

round waffle iron Ø 15 cm

1 Day before making oublies make the batter:
Mix the flour with sugar and add the soft butter. Add the eggs one by one. Each egg must be completely mixed with the batter before adding the next.
Stir well and add the cinnamon, some grated lemon peel and salt.

Prepare:

Take little pieces of the dough and put it between the well greased waffle irons.
Bake the waffle on both sides some minutes and roll immediately after baking around the stalk of a wooden spoon.
Fill with whipped cream.
