Shrimp fritters

(± 30 pcs)


Ingredients:

90 gr flour convert conversion

40 gr convert conversionself raising flour

2 spring onions

2 tablespoons fresh parsley

pinch cayenne pepper

salt

1.8 dl convert conversionsparkling mineral water

125 gr convert conversionsmall shrimps

oil for frying

How to prepare:

Sift the both flours in a bowl.

Add chopped spring onions, chopped parsley, cayenne pepper and some salt and mix well. Make a little hole, add bit by bit the mineral water and stir to a smooth batter. Keep adding water till the batter is slightly thicker than yogurt.

Stir the cooked and chopped shrimps into the batter.

Fill a (deep fryer) pan for a third with oil. Heat the oil to 180°C/360°F.

Make fritters of a 1/2 tablespoon batter and fry on each side 2-3 minutes until golden brown. Remove from the pan with a skimmer and drain on kitchen paper.

Serve hot.
