Shrimp fritters(± 30 pcs)Ingredients:90 gr flour40 gr self raising flour2 spring onions2 tablespoons fresh parsleypinch cayenne peppersalt1.8 dl sparkling mineral water125 gr small shrimps
extra:oil for frying

How to prepare:Sift the both flours in a bowl.Add chopped spring onions, chopped parsley, cayenne pepper and some salt and mix well. Make a little hole, add bit by bit the mineral water and stir to a smooth batter. Keep adding water till the batter is slightly thicker than yogurt.Stir the cooked and chopped shrimps into the batter.Fill a (deep fryer) pan for a third with oil. Heat the oil to 180°C/360°F.Make fritters of a 1/2 tablespoon batter and fry on each side 2-3 minutes until golden brown. Remove from the pan with a skimmer and drain on kitchen paper.Serve hot.
