Hearty salmon pies

self raising flour
2 eggs
1.2 dl
milk
1 tablespoon sour cream
125 gr
sour cream
2 tablespoons mayonnaise
2 teaspoons lemon juice
1 tablespoon fresh chives
1 tablespoon fresh mint

smoked salmon
grated lemon peel

How to prepare:
Sift the flour in a bowl and make a hole in the middle.
Mix eggs, milk and 1 spoon sour cream and add to the flour. Stir the batter and let rest for 10 minutes.
Heat a frying pan with some oil or butter and spoon for each pie bottom 1 tablespoon batter in the pan. Turn the pancakes as soon bubbles appear and fry the other side.
Repeat with the rest of the batter.
Stir sour cream, mayonnaise, lemon juice, chives and mint well.
Spoon a small quantity on each pancake. Garnish with salmon and lemon peel.
