Cheese croquettes

Ingredients:

175 gr hover for conversion mature cheese

30 gr hover for conversion butter

40 gr hover for conversion flour

± 2 dl hover for conversion milk

pepper

1 tablespoon parsley

pinch garlic powder

 

flour

2 eggs

breadcrumbs

oil to deep-fry

Grate the cheese roughly. Melt the butter over low heat, add the flour and stir well. Simmer a minute and add while stirring milk till you have a thick sauce. Add little by little the grated cheese (don't cook). Remove the pan from the heat as soon as the cheese has melted and add (at flavour) pepper, parsley and garlic powder.
Cool well and mold croquettes of a large tablespoon cheese-mixture. Care that there are no cracks in the croquettes.
Beat the egg with 1 tablespoon water. Coat the croquets with flour, egg wash and breadcrumbs. Coat after 10 minutes drying with egg and breadcrumbs again.
Heat the oil to 180°C/360°F and fry the cheese croquettes golden brown.
