Ciabatta

Ingredients:

350 gr hover for conversion flour

2.2 dl hover for conversion water

2 teaspoons dried yeast

1 teaspoon sugar

1 tablespoon olive oil

salt

Mix yeast with sugar and some lukewarm water and let rest for 10 minutes.
Sift flour and salt in a bowl.
Mix the yeast-mixture well with the rest of the lukewarm water and add to the sifted flour.
Knead the dough some minutes well till smooth.
Roll to a flat rectangle of 10 x 40 cm and let, covered, rise for about 30 minutes.
Cut the dough in 2 pieces, pull it a little in the length (do not knead) and let, covered, rise 30 minutes. Dust with some flour and let rise at least an hour .

Prepare:

Preheat the oven to 220°C/425°F (fan oven 200°C/395°F).
Bake the ciabatta about 20 minutes .
