Stuffed courgette

8 medium courgettes
200 gr
ground steak
1 egg
2 tablespoons Parmesan cheese
salt
1/2 teaspoon pepper
6 slices air dried ham
3 tablespoons olive oil
1 tablespoon parsley
1 slice fried bacon
2 tablespoons shallots
2 dl
tomato juice
1,5 cup water

How to prepare:
Cook the courgettes 8 minutes.
Half lenghtwise and hollow (take care not to break the peel).
Dice the courgette-pulp and mix with the ground steak, egg, grated Parmesan cheese, pieces ham, salt and pepper. Fill the courgettes with the mixture.
Heat the olive oil in a large frying pan and fry the chopped shallots, chopped bacon and chopped parsley brown. Add the tomato juice and water, cook for 5 minutes.
Place the stuffed courgettes in a pan.
Pour the sauce over the courgettes and simmer 30 minutes.
