Stuffed courgette(8 servings)Ingredients:8 medium courgettes200 gr ground steak1 egg2 tablespoons Parmesan cheesesalt1/2 teaspoon pepper6 slices air dried ham3 tablespoons olive oil1 tablespoon parsley1 slice fried bacon2 tablespoons shallots2 dl tomato juice1,5 cup water

How to prepare:Cook the courgettes 8 minutes. Half lenghtwise and hollow (take care not to break the peel).Dice the courgette-pulp and mix with the ground steak, egg, grated Parmesan cheese, pieces ham, salt and pepper. Fill the courgettes with the mixture.Heat the olive oil in a large frying pan and fry the chopped shallots, chopped bacon and chopped parsley brown. Add the tomato juice and water, cook for 5 minutes.Place the stuffed courgettes in a pan.Pour the sauce over the courgettes and simmer 30 minutes.
