(Creamy) chicken soup

(3 liter)


Ingredients:

1 kg convert conversionsoup chicken

3.5 liter convert conversioncold water

salt

2 cups celery-stems

1 tablespoon parsley

2 tablespoons chopped onion

How to prepare:

Put the cleaned chicken in a pan with the water and bring to a boil. Remove the appearing foam. Add the remaining ingredients. Put the cover on the pan and simmer about 3 hours. Let the soup cool. Remove, when cooled, the chicken (the chicken meat can be used in salad or soup). Sift the bouillon and chill in the fridge. Remove the fat that appears when cold.

Heat the bouillon for soup and sauces or use the bouillon cold for aspic.

For creamy chicken soup: Add to every cup chicken soup:

2 tablespoons cream and 1 egg yolk (for thickening).

Heat and stir for 3 minutes (do not cook!).
