French fries


1 kg baking potatoes

How to prepare:

Peel the potatoes, wash and dry with kitchen paper.

Cut lenghtwise in slices of 5-7 mm thick.

Cut each slice in fries of 5-7 mm. (Keep in water if you don't fry immediately.)

Heat oil in a (deep fryer) pan.

Put small portions of the fries in the moderate hot oil and fry about 5 minutes over medium heat, until the fries are slightly gold-coloured and done.

Remove the fries carefully with a skimmer from the oil, drain on kitchen paper and let cool.

Heat the oil just before serving over high heat.

Fry small portions fries, till golden brown and crisp.

Drain on kitchen paper and sprinkle with salt.

Serve immediately.
