Puffs dough (basic recipe)


2.5 dl convert conversionwater or milk

50 gr butter convert conversion

pinch salt

150 gr flour convert conversion

4 medium eggs

1 teaspoon baking powder

How to prepare:

Bring the water or milk with the butter and some salt to a boil till the butter is melted.

Add while stirring the sifted flour and keep beating until the dough releases from the pan like a ball photo recipe. Push the dough flat a few times and remove the pan from the heat.

Put the dough in a deep bowl and let cool for 5 minutes. Add, beating well, the eggs 1 by 1. Each egg must be completely taken by the dough before adding the next.

Beat well till the dough gets shiny photo recipe. Let the dough cool.

Add the baking powder to the dough when it's cold.

Never open the oven door while baking. You can open it about 5 minutes before the end of the baking time. The smallest bit of cold air can course the batter to collapse photo recipe.
