Puffs dough (basic recipe)
2.5 dl
water or milk
50 gr butter

pinch salt
150 gr flour

4 medium eggs
1 teaspoon baking powder

How to prepare:
Bring the water or milk with the butter and some salt to a boil till the butter is melted.
Add while stirring the sifted flour and keep beating until the dough releases from the pan like a ball
.
Push the dough flat a few times and remove the pan from the heat.
Put the dough in a deep bowl and let cool for 5 minutes. Add, beating well, the eggs 1 by 1. Each egg must be completely taken by the dough before adding the
next.
Beat well till the dough gets shiny
. Let
the dough cool.
Add the baking powder to the dough when it's cold.

Never open the oven door while baking. You can open it about 5 minutes before the end of the baking time. The smallest bit of cold air can course the batter
to collapse
