Dockumer kofje
(Dokkumer coffee)
1 dl
whipping cream
2 teaspoons sugar
8 teaspoons dark brown sugar
4 shot glasses "beerenburg"
(a jägermeister-like herbs liqueur)
1/2 liter
strong coffee
little roughly crushed dark candy sugar
extra:
4 irish coffee glasses
(or 4 mugs)

How to prepare:
Beat the cream with the sugar fluffy (little fluid).
Put 2 teaspoons brown sugar in each glass and add the beerenburg (at room temperature).
Stir briefly and pour hot coffee over till 1-1.5 cm under the rim.
Pour the cream over the convex side of a spoon on top of the coffee.
Garnish with little crushed candy sugar or some dark brown sugar.
(Dokkum is one of the 11 cities in Fryslân, it's the most northern goal for skaters who participate in the "elfstedentocht",
a Frisian skating contest over 200 km). Beerenburg is the national Frisian drink.
