Cheese rarebit

Ingredients:

4 slices white bread

mustard

2 slices mature cheese

1/2 teaspoon thyme leaves

(or other herbs)

pepper

2 eggs

2 tablespoons (whipping) cream

2 tablespoons olive oil

Preparation:

Cover the crustless bread with little mustard.
Put on 2 of the slices bread a slice mature cheese and divide the thyme leaves and some pepper over. Put the other 2 slices on top and push the slices of bread firm to each other (mustard must by on the inside).
Cut each slice of bread 2 times diagonal into 4 triangles.
Stir the eggs with the (whipping) cream and some salt and pepper well.
Heat the olive oil in a large frying pan.
Cover the rarebits with the egg-mixture and fry over medium-high heat on both sides golden brown and crispy.
Serve hot.
