Spinach omelette

(2 servings)

Ingredients:

1 cup spinach

3 tablespoons olive oil

1 squeezed garlic clove

4 eggs

1 tablespoon butter

pepper at flavour

salt

3 tblsp Parmesan cheese

 

Preparation:

Wash and dry the spinach.
Heat the olive oil in a saucepan, add the squeezed garlic and brown.
Add, while stirring, the chopped spinach. Place a cover on the pan and simmer the spinach for 15 minutes.
Make with eggs, salt and pepper an omelette according the omelette recipe.
Stuff the omelette before folding with the spinach.
Grate with the Parmesan cheese and fold twice.
Serve the spinach omelette immediately.
