Ingredients:1 cup spinach3 tablespoons olive oil1 squeezed garlic clove4 eggs1 tablespoon butterpepper at flavoursalt3 tblsp Parmesan cheese |
Preparation:© Janneke's Recipe pages - recipe Atkins dietWash and dry the spinach.Heat the olive oil in a saucepan, add the squeezed garlic and brown.Add, while stirring, the chopped spinach. Place a cover on the pan and simmer the spinach for 15 minutes.Make with eggs, salt and pepper an omelette according the omelette recipe.Stuff the omelette before folding with the spinach.Grate with the Parmesan cheese and fold twice.Serve the spinach omelette immediately. |
