Don't beat the meat!If the meat has been treated well: beating not necessary. If the butcher advises to beat the meat to get it tender, it indicates that the meat is too young to sell.
How long do I pan fry to get the perfect tenderloin steak??Everyone wants their steak different. I always use the frying pan.Baking time for a beef tenderloin steak of 2 - 2.5 cm (1 inch) thick:Coat the steak with little oil, pepper and salt and roast on each sides 1.5 minute over high heat in a pan .Saignant (fr.) or red: roast each side 1.5 minute extra.Medium: roast each side 3 minutes extra.à Point or almost well done: each side 4 minutes extra.Put the steak after baking for 5 minutes in a bit foil in an oven of 100°C/210°F to let the meat juices redistribute.
