Cheese soup
2 tablespoons butter
3 tablespoons flour
8 dl
bouillon
(or 0.8 liter
water and
2 bouillon cubes)
1 shallot
1 dl
coffee cream
100-150 gr
old cheese
1 tablespoon parsley

How to prepare:
Melt the butter in a pan and add the flour.
Stir well and let the mixture simmer a minute.
Add the bouillon and bring, while stirring well, to a boil.
Add the grated shallot and the coffee cream and simmer 5 minutes.
Grate the cheese and remove the pan from the heat.
Add (at taste) the cheese to the soup and stir well until the cheese has melted.
Serve the soup garnished with parsley and French bread.
Variation:
add, with the shallot, sliced of chopped red bell pepper or garlic.
